Embrace Your Inner Bula: You’re On Fiji Time This Week!

For all the travelers out there who are feeling a little bit housebound these days and are missing your exotic ports of call, this post is for you. For anyone who finds themselves in a food rut, tired and bored by all the usual dinnertime choices, this post is for you too. And for anyone feeling especially grumpy, frustrated or lackluster when it comes to navigating this strange roller coaster of a turbulent world, this post is also for you.

That may sound like a lot of importance to place upon on the shoulders of one food related blog post but the salve for all these wayward troubles can pretty much be soothed in one word thanks to our featured destination of the week.

Tonight’s post takes us to the beautiful islands of Fiji, via the kitchen, to make a very quick, very easy  fish dish that tastes of coconuts and day dreams and relaxed coastal living. Welcome to Week 16 of the International Vintage Recipe Tour. Welcome to Fiji, dear kitcheners!

There is no doubt that Fiji is one of the most picturesque places in the world. But there is more to it than just sand and sun and beautiful beaches. Beyond all of the stunning panoromas, swaying palms and exotic flowers, there lives something even more beautiful. So beautiful in fact it can’t be translated via photograph.

It’s not a tangible item that you can hold in your hand or buy with your credit card or gift to a friend. It’s not a specific place you can visit, or a hotel you can check into, or a body of water you can bob around on. It’s not a rainbow, or a waterfall, or a sunset, or a mountaintop view or a brightly colored flower. It’s not a hike, nor a sunbathe, nor a visit to the spa.

It’s a feeling.

An inward attitude. A manifesto. An intrinsic, deeply rooted way of being. Something completely unique to the 22 islands that make up the country of Fiji.  It’s called bula.

Technically referred to as a greeting similar to saying hello, bula carries much more significance than a simple salutation. It resonates as a way of life for anyone lucky enough to visit or live on one of the islands. It also happens to be one of the most commonly talked about things that people miss most about Fiji once they leave the country.

First bula starts out as a pleasantry. A sincere wish for happiness, good health and a zesty energy for life. Then it subtly transforms from a word you are saying into a feeling you are emoting. It becomes an infectious enthusiasm of spirit. A radiation of joy. An exuberance of attitude. Regardless of current circumstances or situations, in spite of challenges and setbacks, embracing the bula spirit means expressing happiness, appreciation and friendliness. In other words… smiles and good nature for all. Whether they are strangers or loved ones, coworkers or customers, kids or adults, neighbors or newcomers, this extension of outward positivity has labeled Fijians the friendliest people in the world.

Practically a national language in and of itself, bula is a trademark of the island’s hospitality. It encourages warmth and welcome. Good cheer. Grateful attitudes. And a delight in the moment right in front of you. Besides their unique heritage and their idyllic landscape, it is the characteristic that Fijians are most proud of and what sets them apart as a community from everyone else in the world.

This type of jubilant reminder couldn’t have come at a better time. Especially for this week in regards to the Recipe Tour. As I’ve mentioned in a few posts over the last couple of months,  it’s been a bit of a challenge to keep the Tour on track since the tornado in March and then the pandemic right after. As you all know, it’s easy to get caught up in the global events unfolding each day and then to let that news cloud your mind, dampen your spirit, and affect your disposition. Sometimes writing about food while all this chaos is going on in the world seems trivial and I struggle with the desire and importance of wanting to share a good recipe while so much catastrophic stuff is going on.  But learning about Fiji’s bula spirit this week and then making one of their traditional island recipes really let in a breath of much-needed fresh air and perspective, both literally and figuratively.

If you saw the sneak peek video for this week’s recipe on Instagram, you may have noticed that it looked a little bit different than all the other videos from all the other weeks. That was due to a rainstorm that thundered its way through the preparation parts of this  week’s film shoot.

It was one of those storms that comes on quickly, toting dark grey clouds the size of whales and sucks up so much natural light, you have to turn on every single lamp in the room just so you can see what you are doing right in front of you. Rolling in just a few minutes into the cooking process, right as I began sauteing onions in a pan for the cream sauce, this storm turned the kitchen so dark and moody, the photo/video shoot had to immediately go on location (aka the balcony) so that I could grab as much natural light as possible. Otherwise the whole cooking process would have resulted in murky colors and grainy details. Fortunately for this purpose, there’s a small nook on the balcony between two potted herbs and some blooming flowers that is impervious to damp weather. It’s the one little dry spot that can accommodate an impromptu photoshoot without ruin to camera or food subjects.

In the video, you may have noticed what sounded like crashing waves roaring above the Fijian music playing in the background. That was actually the sound of the wind and the rain from the storm.   The heavy rain and the 60 mile an hour winds that eventually would come later that evening, kindly held off long enough so that the entire series of food photos were done from start to finish before I had to scurry around the balcony and bring everything inside.

It can be a little bit stressful cooking under the pressure of weather and good light, especially when preparing a dish that doesn’t offer any leeway for prolonged preparations. Generally, it takes anywhere from 3-6 hours to prep, photograph and video each week’s recipe for the Tour, depending on the level of difficulty and the cooking steps involved. Over the course of the last sixteen weeks, I’ve developed a nice little routine when it comes to making and photographing the recipes. But this week, the storm threw a wrench in the rhythm. This dish couldn’t sit around waiting on the weather to pass nor could it be made halfway and finished up the next day.

Instead of getting all flustered with the change in routine and getting caught up in some silly forced notion of perfectionism when it came to the photos, I thought about Fiji and how they might have handled this situation. I bet the first thing they would have done would be to smile and then say bula. Which is exactly what I did. Instead of fighting the weather, I appreciated the new way of thinking that the storm presented.  I didn’t fret over the lack of light and the frenzied pace of cooking. Even though there were mad dashes outside to photo and then mad dashes back inside to cook some more. I went with the flow  and managed a new rhythm. I poured sauce over fish while clouds poured rain over me. And I smiled about it. I embraced the bula spirit.

And you know what happened, dear kitcheners? Everything turned out just fine. Delicious in fact. Do you know what else happened? This was the first time in 16 weeks that a Tour recipe was prepped, prepared, photoed, cooked and on the table for presentation in under an hour. That’s a new first in the Kitchen! All because the rain storm scurried me along. Funny enough, this is the way of typical rain storms in Fiji as well – quick to arise, heavy in outpour, brief in stay. I love that Lady Nature decided to add her own little bit of Fijian authenticity to the cooking day.

Like the islands themselves, this Baked Cod recipe is colorful, comforting and a breeze to make (rain or shine!). It’s really three recipes in one, each broken down into segments  – cream sauce, coconut milk, and cod, but since we’ve already made fresh coconut milk in Week 8’s trip to Ceylon, I substituted canned coconut milk for fresh, which shaves 45 minutes off the prep time. The cheddar cheese in the cream sauce can be yellow or white, depending on your own preference as it doesn’t affect the pearly color of the sauce either way. I also chopped up an extra  1/4 cup of the onions and green pepper for garnish at the end. That step added a nice fresh crunch to the finished dish. Had we not had the rain storm to contend with, this dish would have taken about 20 minutes to prepare. True to its island culture and the bula spirit,  it’s a joy to make.

We’ll start with the cream sauce, since you’ll want to make that first and just keep it warm on the stove while you assemble the cod in the baking dish. Again, please excuse the photos in this post, they don’t really capture beauty of the dish nor the process as I would have liked but you’ll get the idea. I loved this recipe so much I’ll happily make it again (on a sunny day!) so that I can take some new photos and enjoy a taste of the islands once again.

Fiji Cream Cream Sauce

1 tablespoon butter

3 tablespoons finely chopped red onion (plus 2 more tablespoons more for garnish)

3 tablespoons finely chopped green pepper (plus two more tablespoons for garnish)

1 1/2 cups coconut milk

salt to taste

1 1/2 tablespoons cornstarch

Preheat the oven to 350 degrees. Melt the butter in a saucepan. Cook the onion and green pepper, stirring, until the onion is wilted (about 4-5 minutes). Add 1 1/4 cups of the coconut milk and bring to a boil.

Blend the remaining 1/4 cup coconut milk with the cornstarch  and stir it into the simmering sauce . Simmer for three minutes, stirring constantly.

Baked Cod in Cream Sauce

Serves 4

2 cups boneless cod filet, cut into 1″ inch cubes

1 1/2 cups Fiji Cream Sauce

1/2 cup freshly grated cheddar cheese

Arrange the cod pieces in one layer in a baking dish and pour the sauce overall.

Sprinkle the cheddar cheese over the top…

and bake 30-40 minutes or until the cheese is melted and lightly browned. Once ready, remove from the oven and let sit for 5 minutes before serving.

Because of Fiji’s geographic location, its local cuisine has been influenced by India, the Polynesian Islands, Asia and most importantly by what grows naturally well on the islands. Coconut, sweet potatoes, root vegetables and seafood are common staples. Since there were no serving suggestions when it came to this recipe, I paired this creamy fish  with black rice for both its dynamic color and its fragrant, slightly nutty taste. This turned out to be an ideal companion as the flavors blended together really well and the rice soaked up some of the sauce. A little sprinkle of freshly chopped purple onion and green pepper on top of the fish added a splash of color for garnish.

Even though the preparation for this dish was a little haphazard, by the time we were ready to try it, the bula spirit had fully presented itself.  Once the first bite was taken, it really did feel and taste like a rejuvenating dinner that had the power to soothe a number of situations. Placing a colorful flower on the plate lent an exotic island aesthetic, ideal for the wanderlust travelers feeling stuck at home. The creamy coconut milk, an alternative to a more common, basic white sauce or cheese sauce, added an out of the ordinary flavor component, offering fun inspiration for all the bored cooks out there.  And the green, purple and black hues of this dish added a delightful dose of color therapy (read more about the power of this in Week 10: Columbia) which couldn’t help but brighten up even the most lackluster soul. I found the comfort level of this meal to be a 10 (out of 10!) so for all you eaters feeling grumpy or out of sorts, this dish will hopefully raise your spirits in an equally comforting way as well. That’s the magic of food in Fiji for you! That’s the magic of the bula spirit inside you!

Can A Painting Inspire Dinner?

Can a painting inspire dinner? Absolutely! That’s exactly what happened when I found this tropical painting while out curating items for the shop. It’s a petite folk art landscape scene from Haiti with a handmade wooden frame and stretched cotton cloth instead of canvas. The colors are so vibrant…

and the brush strokes so full of energy.  The whole scene sings with the colorful island vibes that the Caribbean is known for.  Immediately it made me think of the 1960’s cookbook in the shop – The Art of Caribbean Cookery – another midcentury treasure that also sings songs of colorful island life.

The painting hails from Haiti, just one of the 28 islands that make up the Caribbean, but the cookbook, written by Carmen Aboy Valldejuli, includes all the cultural influences of all the islands… Puerto Rico, Cuba, the Dominican Republic, Haiti, Jamaica, etc.  Carmen is Puerto Rican herself and grew up in a traditional island household of the 1920’s, a world where servants cooked and children were not encouraged to help.

As Carmen explains in the introduction of her cookbook,  it was deemed improper for well-brought-up young ladies to perform menial household chores, cooking included. “Only occasionally was I ever allowed to enter the vast room where food was actually prepared, and how I regretted that.”

But things changed once she met her husband, Luis, in the late 1930’s. Luis was an unashamed food zealot – an eater, a cooker, and a recipe collector.  He had a day job in engineering but on nights and weekends, he and Carmen crafted their time together around the glorious subject of food. Bolstered by one another’s support and enthusiasm,  the two indulged their culinary interests in a fun and curious way, which turned out to be the only encouragement Carmen needed to realize her life-long passion for cooking. What used to be forbidden was now a freedom.

Carmen took on this new interest with gusto. She and Luis dined their way through the islands, exploring offerings at family tables, fancy restaurants and everything in between. They traipsed around sugar plantations and farms and fruit groves. They listened and questioned and learned from everyone they encountered about cooking methods and techniques, about family stories and recipes passed down through generations. After each escapade, they’d return home to their own kitchen in Puerto Rico ready to dissect what they had discovered. As Carmen learned first hand, cooking in the Caribbean was a vast wonderland of food, flavor, and influence from other countries far from the tropics.

Floating between the Gulf Of Mexico and the Atlantic Ocean, with the United States, Mexico and South America acting as surrounding neighbors, the Caribbean is made up of an incredibly diverse population – an exotic tribe of people from Europe, Africa, Mexico, the Mediterranean coast, the United States and the U.K.

Originally there were the first inhabitants, the Arawak Indians, but then came the British, French, Dutch, Danish, and Spanish settlers along with slaves from Africa who worked the sugar plantations and ex-pats from America looking for escapism. All these cultural influences grew diversity on the islands and greatly layered the cuisine of the Caribbean, making it not just one type of food, but a blend of many nationalities.

In the painting, there is no sign of food, but its very essence pulls your imagination towards sandy beaches, tropical drinks, coconuts, rum, pineapple, papayas. Carmen is quick to explain that cooking in the Caribbean is not all “roast pig and ritual,” that food varies from island to island, built upon six centuries of history and the cohabitation of many cultures.  It was with that in mind that I chose, a recipe from Carmen’s cookbook that is an authentic Carribean dish marinated in generations of foreign influence. For today’s post, we are making a recipe that combines elements of Spain with two Caribbean staples – olives and capers. The dish is called Pescado Dorado or Golden Fish and it is a lovely meal to wrap up the end of summer with since it shines best with garden tomatoes fresh off the vine.

Carmen’s recipe recommended using a whole fish but I used cod filets instead since I couldn’t find a whole tropical-looking fish at our neighborhood market.  The recipe serves 8 but if you don’t want to make a big dinner out of it, simply cut all the ingredient measurements in half and you’ll wind up with a smaller serving for four.

PESCADO DORADO – GOLDEN FISH

(serves 8)

1 fish weighing 4 lbs, cleaned (or 4lbs of fish filets – I used cod)

2 large limes

2 tablespoons salt

1/2 teaspoon pepper

2 medium onions, peeled and sliced

2 bay leaves

12 green olives

1 tablespoon capers

1 tablespoon liquid from jar of capers

1/2 cup water

1/2 cup olive oil

2 cloves garlic, peeled and mashed

1 1/4 pounds tomatoes

2 canned pimientos

If using a whole fish, wash it inside and out. Ignore this step if using fish filets.  Cut 2 slight gashes on both sides of the fish or filets. Place the fish in a baking dish. Squeeze the juice of the limes over the fish and sprinkle with salt and pepper.

Arrange the rest of the ingredients from the onions to the tomatoes on top and around the sides of the fish.

Preheat oven temperature to 550 degrees.* Bake fish for 15 minutes. Lower temperature to 425 degrees and bake for 25 minutes longer, basting fish occasionally.

Heat pimientos and serve as a garnish on top of fish.

*A note on cooking time and temp – In 1963, Carmen’s oven reached 550 degrees. In 2018, the hottest my oven gets is 525 degrees. I cooked the fish at 525 degrees for the first 15 minutes and then reduced it to 425 degrees and cooked it for the remaining time with no problems.

What emerged from the oven, after it was done baking, was a flaky cloud of codfish that was swimming in a salty citrus sea. To say that this dish was anything but delicious would be an understatement. Sometimes fish dishes are very light and leave you still feeling hungry, but this one is robust in flavor and is filling enough on its own.  I paired this fish dish with a handful of sauteed spinach and garlic but rice would also work or a side salad. Dessert was kept equally simple with a fresh fruit board that included pineapple, mango, papaya and fresh coconut.

We also had a little musical accompaniment during dinner from Harry Belafonte, one of the most iconic singers of Caribbean folk songs in the world. About a month ago, I heard the song Cocoanut Woman for the first time…

and instantly loved it. Further discovery led to his Calypso album, a bestseller full of Caribbean folk songs that was released in 1956. In its first year, this album sold a million copies landing Harry on top music charts and making him an international superstar. If you are unfamiliar with his work, you’ll find a big collection of his songs on here including the Jamician folk song Day-O about dock workers loading banana boats and the island love song, Jamaica Farewell.

Between the three – painting, music, and food – this dinner felt like a mini island vacation all in itself.  If you find that your summer has come and gone and left you without the chance to relax as much as you wished, try spending the evening with Carmen and Harry and Emmanuel (the painter) and see if your spirit can’t be soothed by a little slice of creative paradise. A glass of rum helps spread the cheer too.

Incidentally, I tried to find out more about my muse for this post, the artist named Emmanuel who painted the Haitian landscape that started all this to begin with. But he was elusive. As it turns out, there are LOTS of painters named Emmanuel in the Caribbean. That’s okay, though, it doesn’t matter that he can’t be tracked down further.  Muses aren’t exactly known for their easy accessibility.  Bob Dylan believed that the highest purpose of art was to inspire. In that case, Emmanuel certainly fulfilled his role, at least during dinner time in the Vintage Kitchen. As for Carmen, she went on to become an expert, the expert, of Caribbean cuisine, publishing several cookbooks throughout her life. Even though she died in 2005, she is still regarded as the classic authority on Caribbean island cuisine.

So as you can see, a painting can indeed inspire dinner and also a little more. Hope this post inspires you just as much. Cheers to soaking up the essence of the islands without ever leaving home.

Culinary Creativity: Recipes From Our Prize Winner!

By day they are executives in New York City but by night (and most weekends too) they are culinary wizards adventuring their way around the inventive kitchen. Meet blog reader Michael, one of the winners in last month’s Spartan Souvenir giveaway and his lovely wife Renee.

As soon as their prize of Greek olive oil and wild mountain oregano hit their mailbox they started daydreaming about what they could make. Possibilities abounded of course, but it didn’t take very long before they settled on two Mediterranean-style dishes that highlighted their new winnings and captured the simple fresh flavors of their farmer’s market palates.  In a lovely spirit of community, these two home chefs not only sent back a follow-up note on their gift receipt but also included recipes and photos of everything they made with their Sparta samplings. Fantastic! Here is what they made…

“The olive oil has such a nice fruitiness and the oregano is slightly floral and delicate,” shared Renee. “We love it!”

Long-time connoisseurs of make-it-yourself pizza they first prepared a Mediterranean style Greek pizza with homemade dough and an inventive brussels sprout topping. Next, (just in time for Fish Friday) they made a simple Greek-style baked cod using local fish and an array of herbs.

Michael and Renee’s recipes couldn’t have come at a better time in our calendar year. If you are still entertaining holiday house guests the Greek Pizza makes for a fun party pleaser and can be doubled or tripled in size to fit all appetites.  Or if you find yourself ready to put the heavy plates of the holiday season behind you then the Greek Baked Cod would be just the ticket for a light and refreshing meal. Both recipes highlight the unique flavor of the olive oil and oregano from Sparta, Greece which you can find at thespartantable.com All other ingredients can be locally sourced from your grocery or market.

Greek Pizza

Note: Michael and Renee followed Jim Lahey’s lead on the pizza dough preparation. You can find a step-by-step guide here which includes a casual video on the making of it all. If you have never made homemade pizza dough before don’t feel intimidated, it’s very easy and this is a no-knead recipe which makes it even easier. If you can’t sacrifice the time for the dough, start out simple with a pre-raised dough ball from Trader Joe’s or the fresh bakery department at most supermarkets.

(for the dough)

3.5 cups all-purpose flour ( M&R veered slightly from the dough recipe and incorporated some whole wheat flour as well. This recipe reflects their version.)

1/2 cup whole wheat flour

1/4 teaspoon active dry yeast

2 teaspoons fine sea salt

1 1/2 cups water

(for the topping)

1/2 red onion, thinly sliced and placed in a bowl, covered with water for at least 30 minutes, then drained and dried

1 Serrano chili pepper, thinly sliced (remove the seeds and veins if you are averse to heat or if your chili is super strong)

8-10 raw brussels sprouts, shaved

1/4- 1/3 cup (plus more for topping) Parmesan cheese, freshly grated

1/2 teaspoon Spartan Table wild mountain Greek Oregano

5 ounces Spartan Table Extra Virgin Greek olive oil

Salt and Pepper to taste

Prepare dough as directed. Preheat oven to 475 degrees. Add pizza stone about one hour prior to baking. Mold the dough into a circle on a pizza peel lined with semolina flour to prevent sticking and for easy sliding.

Place all topping ingredients together in a bowl and mix in olive oil and salt and pepper to coat.

Scatter your toppings evenly on top of the dough. Bake until bubbly and slightly browned about 10-12 minutes. Depending on your oven, this could take more or less time. Finish with olive oil,  sea salt, and extra Parmesan cheese.

In The Vintage Kitchen UPDATE! August 2021 – The sky is the limit when it comes to experimenting with this homemade pizza recipe.  Greek olive oil and wild mountain oregano pair beautifully with an array of toppings… 

including mushroom meatballs, fresh basil, cherry tomatoes and this heirloom Italian sauce recipe.  Featured here are (clockwise from top) Greek Pizza; Italian Cherry Tomato; and Meatless Mushroom Meatball.

Greek Baked Cod (serves 2)

Fresh, local cod  (enough for two portions)

1/2 teaspoon Spartan Table Greek oregano

5 ounces Spartan Table Greek olive oil for drizzling and finishing

1  quarter of a large organic lemon, thinly sliced

1 half of a medium shallot, thinly sliced

1/4 quarter cup of thinly sliced fresh fennel (from the bulb)
 
Salt and pepper to taste
 
1/2 tablespoon fresh parsley, finely minced, for finishing

Preheat oven to 425 degrees.

Add cod to two pieces of foil paper (doubled so that it doesn’t leak) placed on a baking sheet. Drizzle fish with the olive oil, oregano, and salt and pepper. Arrange the shallot slices on the bottom of the foil, place the cod filet on top with the fennel and lemon slices.

Close the foil (like a packet) and bake for about 20-25 minutes, depending on your oven and size of the cod. Ours took about 20 minutes to cook. Finish with an extra drizzle of the oil, sea salt and parsley.

In the land of the Vintage Kitchen, it is very exciting to have such an enthusiastic (and delicious!) response to a blog post. Hopefully, Michael and Renee’s recipes will help pave the way for more culinary adventures discovered by our readers. Having come full circle with an interview that originated months ago in the faraway, mystical olive groves of Greece and ended up finally on the kitchen table of two New York foodies, this post feels a bit like magic. Even though a zillion miles separates us from Sparta and  Nashville and New York we now share a commonality in the history of a food. And our cross-culture community feels a bit more close-knit.  As Homer said, “the journey is the thing.”

Again, a big thank you to Jehny and George for carrying on the family tradition of olive-growing in Greece and to Michael and Renee in New York for inspiring us with two new recipes fit for a feast.
